Indeed you can!
If you go to the menu and select "Settings" there is a "Default Subreddit" item in the List View settings to select what you'd like your default subreddit to be.
Using "Default sort option" you can select whether to sort by what's hot new, rising, top, controversial, or saved.
Under the "Comment Options" section in the Detail View settings, you can select the default sort for comments.
